Willow & Fern began as a weekend farmers' market stall in 2019. What started as a way to feed neighbors with something honest and well-made grew into a full kitchen, a team of three bakers, and a pantry that stocks the best ingredients Colorado has to offer.
Every loaf is fermented for at least 36 hours. Every pastry is laminated by hand. Every item on our shelf is something we'd serve our own families. We source our flour from regional mills, our butter from Rocky Mountain dairies, and our coffee from roasters we visit every quarter to taste the new batches.

We visit our flour mill twice a season. We taste the coffee before we order. If an ingredient doesn't meet our standard, we don't carry it — no exceptions.
Our sourdough starts with a 10-year-old starter. Dough is mixed overnight and fermented for 36 hours — long enough for flavor to develop and gluten to break down.
Every loaf is shaped by hand. Proofing happens in our temperature-controlled room, where humidity and time are treated with the same care a winemaker gives a vintage.
